The estate’s red wines

Nine Pinot Noir cuvées, from village to Premier Cru. Wines of fruit and texture, built to keep without ever giving up freshness.

Pinot noir

The Pinot Noir of Mercurey

Pinot Noir has small, tight bunches. Its berries, thin- and fine-skinned, carry an intense colour with blue-black or deep violet glints. On deep marls it gives the most structured wines; on stony soils born of decomposed rock it turns suppler and finer.

The Mercurey appellation is sought out first for its reds. Our nine wines cover its whole range: generous village bottlings that open in their first year, through to Premiers Crus for keeping, Les Veleys the most complete of them.

For a few years now our extractions have been gentler: punching down has given way to pump-overs, twice a day. We gain in freshness and purity of fruit.

Premiers Crus, 5 wines

Bouteille de Mercurey Premier Cru Red Les Veleys, Domaine Raquillet1er cru

Mercurey red

Les Veleys

A wine for keeping, poised between power and structure, with very silky tannins and a mineral finish bringing freshness. It refines gradually towards a smoother texture after a few years, the most complete of the estate’s Premiers Crus.

Bouteille de Mercurey Premier Cru Red Les Naugues, Domaine Raquillet1er cru

Mercurey red

Les Naugues

The southern exposure brings black fruit aromas to this Premier Cru, powerful yet round and fleshy. A sun-filled, generous wine, broad on the palate, with a fine texture that asks only to evolve slowly.

Pinot noir

Cellaring5 to 10 years

Bouteille de Mercurey Premier Cru Red Les Vasées, Domaine Raquillet1er cru

Mercurey red

Les Vasées

The fruitiest and most supple of the estate’s Premiers Crus. A distinctly Pinot nose, a savoury, round palate with fine texture. Sappy and complete, with generous black fruit.

Pinot noir

Cellaring5 to 8 years

Bouteille de Mercurey Premier Cru Red Clos Paradis, Domaine Raquillet1er cru

Mercurey red

Clos Paradis

A wine of great energy and suppleness, richly fruited, wrapped in very silky tannins. A rich nose of black fruit, spice and a liquorice note. The palate is concentrated and generous, juicy fruit balanced by salinity. Medium-term keeping.

Pinot noir

Cellaring4 to 7 years

Bouteille de Mercurey Premier Cru Red Cuvée Révélation, Domaine Raquillet1er cru

Mercurey red

Révélation

This special cuvée, from a parcel of vines over a hundred years old, gives a dense, concentrated, sappy wine, yet one that preserves finesse and fruit. A pulpy juice with a nervy sap running through it; its tannic grip on the finish signals real ageing potential.

Village, 4 wines

Bouteille de Mercurey Red Vieilles Vignes, Domaine Raquillet

Mercurey red

Vieilles Vignes

Although made from old vines, this is a supple, generous wine with fresh fruit aromas and a smooth, silky texture. It opens up from its first year, the ageing kept light to preserve elegance. A wine of pure pleasure, enjoyable young.

Pinot noir

Cellaring4 to 6 years

Bouteille de Mercurey Red Les Chazeaux, Cuvée Suzanne, Domaine Raquillet

Mercurey red

Les Chazeaux « Cuvée Suzanne »

A generous, fruit-forward wine of real depth, with an intense colour. Hugely expressive, it bursts on the palate, a village Mercurey with nothing to envy of a Premier Cru.

Pinot noir

Cellaring2 to 5 years

Bouteille de Mercurey Red Les Carabys, Domaine Raquillet

Mercurey red

Les Carabys

A generous, fruit-driven wine that reveals itself early. From a 60-year-old east-facing parcel on clay-limestone soils, it plays on depth and power.

Pinot noir

Cellaring2 to 5 years

Bouteille de Mercurey Red Chamirey, Domaine Raquillet

Mercurey red

Chamirey

A supple, lively Pinot Noir with a sleek profile. Crisp and tangy, already generous and fleshy, carried by smooth ripe fruit. A cuvée to enjoy young, for its freshness and drive.

Our craft

From bunch to barrel

01

Hand harvest

Every bunch is picked by hand, then taken to the cellar where six people take turns at the sorting table. Berry by berry, any damaged or under-ripe fruit is set aside.

02

Cold maceration

Fully destemmed, received by gravity into stainless-steel bins, then a five-day cold pre-fermentation maceration at 12°C. The fruit is drawn out before fermentation begins.

03

Natural fermentation

No added yeast: fermentation starts on the indigenous yeasts present on the grapes and in the cellar. Two pump-overs a day, no punching down. Vatting off after 15 to 20 days.

04

Barrel ageing

Twelve months in French oak. The barrel stock is renewed by thirds, the oldest are three years old, and each wine receives its own ratio of new oak.
